摘要
以小麦麸皮为原料,采用双酶法制备膳食纤维,通过正交试验得出其最佳提取条件:α-淀粉酶用量0.4%,α-淀粉酶解时间50 min,蛋白酶用量0.2%,蛋白酶酶解时间50 min,此时麦麸膳食纤维得率81.28%。
The technology for extracting the dietary fiber from wheat bran by the double enzymatic method was studied.The result of the orthogonal test showed that optimal extracting conditions were α-amylase concentration 0.4%,α-amylase hydrolyzing time 50 min,trypsinase concentration 0.2%,the trypsinase hydrolyzing time 50 min,by which the extracting rate of dietary fiber was 81.28%.
