广州市海珠区餐饮单位熟食间卫生状况调查

Investigation on Sanitary Status of Cooked Food Rooms in Catering Units of Haizhou District of Guangzhou City

摘要 目的了解广州海珠区餐饮单位熟食间的卫生状况,以便采取控制措施保障广州亚运会的顺利召开。方法按加工经营面积≥500m2和<500m2随机抽取各20家餐饮单位,进行熟食间卫生状况调查和现场熟肉制品、工用具采样检测。结果部分餐饮单位熟食间面积偏小,卫生设施不够完善,紫外线灯的安装使用不正确,熟食间操作人员学历偏低,熟肉制品的卫生质量有待提高。结论应改善熟食间的建筑设计,加大卫生设施的投入,加强人员培训,确保2010年广州市亚运会的食品安全。 [Objective]To understand the sanitary status of cooked food rooms in catering units of Haizhou District of Guangzhou City,so as to take control measures for guarantee Guangzhou Asian Games.[Methods]According to the business area ≥500 m2and 500 m2,20 catering units were randomly selected for survey of sanitary status in cooked food room and sample test of cooked meat products and equipment.[Results]Some cooked food rooms were too small.The UV lamps were installed and used incorrectly.Cooked food operators were not well educated.The sanitary quality of cooked meat products needed to be improved.[Conclusion] It is necessary to improve the architectural design of cooked food room,to increase investment in health facilities,and to strength staff training to ensure the food safety of 2010 Guangzhou Asian Games.
