摘要
黄曲霉毒素是一类能致癌、致畸、致突变的真菌毒素,被世界卫生组织列为一级致癌物。这类毒素广泛存在于花生、玉米等食物中,不仅对人和动物的健康造成了严重的危害,也给我国的出口贸易带来了巨大的损失。黄曲霉毒素的脱毒方法有物理、化学和生物学方法,其中生物学方法以其高效、不产生二次污染、不破坏食品原有的营养价值和适口性而受到人们的关注。综述了近十年来国内外黄曲霉毒素的生物学脱毒方法。
Aflatoxins,a kind of carcinogenic,mutagenic and teratogenic mycotoxins,are classified as firstdegree carcinogen by WHO.They widely exist in some food such as corn,peanut and not only have great harm to human and animal health,but also have caused enormous loss to China's export trade.There are phisical,chemical and biological methods for their detoxification,in which biological detoxification methods has received most attention for its high efficiency,not causing secondary pollution,not destroying food's original value and palatability.Biological detoxification methods of aflatoxins in the past 10 years are reviewed in this article.
