摘要 按照我国卫生部《食品安全毒理学评价程序和检验方法规范》,采用急性毒性试验、Ames试验、小鼠骨髓嗜多染红细胞微核试验和小鼠精子畸形试验对植物甾醇作为食品添加剂和保健食品原料的食用安全性进行评价。结果显示:大、小鼠急性经口LD50大于5 000 mg/kg,Ames试验、小鼠骨髓嗜多染红细胞微核试验和小鼠精子畸形试验结果均为阴性。由此得出植物甾醇属于实际无毒物,可以作为一种食品添加剂和保健食品原料进行开发、利用。 The edible safety of phytosterol as a food additive and health food material was evaluated.According to the technical standards for test toxicological assessment of health food issued by Ministry of Health of the People's Republic of China,the acute toxicity test,Ames test,the test of micronucleus of polychromatic erythrocytphilic of mouse and mouse sperm abnormality test were performed.The oral LD50 in rats and mice was greater than 5 000 mg/(kg·bw),and three terms of hereditary toxicity were all negative.Phytosterol was a kind of actual non-toxic substance and could be developed as a food additive and health food material.
