摘要
在生产优质葡萄酒时,利用橡木桶辅助陈酿提高酒质是一种常用的技术手段。本文利用部分析因实验设计确定影响葡萄酒陈酿的显著性因素,并利用响应面分析方法优化了葡萄酒在橡木桶中的陈酿条件,确定最佳的橡木桶陈酿方案,以达到优化利用橡木桶的目的。
Aging wine in barrel to produce quality wine is a common technique. This experiment determinated significant parameters which influence wine aging results by fractional factorial experimental design, and optimized wine barrel aging parameters by response surface methodology, found out the optimum barrel aging condition, so as to make optimum use of the barrels.
