摘要
为了了解油菜花粉、玉米花粉、松花粉(油松)、荞麦花粉这四种不同科目花粉的营养成分的含量和质量,以便于为更好的发挥其价值提供依据,在分别将油菜花粉、玉米花粉按国标测出营养成分含量,同时查出中国食物营养成分表(2004)中松花粉(油松)、荞麦花粉相应成分含量,用氨基酸评分(AAS)、化学评分(CS)和必需氨基酸指数(EAAI)评价氨基酸质量,并与常见动物性食品营养成分进行对比分析。结果发现这四种花粉的营养价值较高,都是很好的食物营养来源,但限制性氨基酸各不相同,需相互搭配使用,才能更好的发挥花粉的营养价值。
To analyze and evaluate the nutrition composition of the rape pollen, corn pollen, pine pollen (Chinese pine) and buckwheat pollen which from four different sources, so as to provide the evidence for a better developing. Measured the nutrients concentration of rape pollen and corn pollen respectively by National Standards, and get the nutrients concentration of pine pollen'(Chinese pine) and buckwheat pollen from Chinese Food Nutrition Facts (2004). Used amino acid score (AAS), chemical score (CS) and essential amino acid index (EAA I) evaluation the quality of amino acids, then these results were compared with the other most common animal foods. The results found that the four kinds of pollens had high nutritional value and they were all good sources of nutrition, but the limiting amino acids varied with the need. The pollens should be used in proper proportions in order to play a better use of the nutritional value.
