摘要 研究皂化及微波处理法对番茄红素提取效果的影响。采用正交试验优化皂化液浓度和微波处理功率等条件,结合考虑生产应用的经济性,确定番茄红素提取的最优工艺条件为:NaOH皂化溶液浓度0.6 mol/L、微波处理功率为300 W、微波处理时间为80 s、液固比为3∶1(mL∶g),提取率可达65.33%。 The effects of saponification and microwave technique on the exatraction of lycopene from tomato were studied.The optimum conditions of saponification,microwave power,the treatment time of microwave,the ratio of liquid and material were determined.The optimum paremeters were as follows: 0.6 mol/L NaOH,microwave power 300 W,treatment time 80 s,ratio of liquid and material 3∶1(mL∶g).The extraction yield of lycopene was 65.33 %.
