摘要
以金枪鱼为原料,研制午餐肉罐头,结果表明:金枪鱼午餐肉在生产工艺上是可行的。主要配方为变性淀粉7%,明胶5%,蛋清15%,水40%,制品具有特有的滋味和香气,具备了金枪鱼所特有的营养价值,组织细嫩,适合各年龄段人群食用。
Developing canned luncheon meat using tuna as the main raw material,has produced result which is practicable in actual production.The Main ingredients are modified starch 7 %,gelatin 5 %,egg white 15 %,water 40 %,Final product has the characterisfic of tuna,and at the same time consisted the nutritional value derived from tuna.The texture of the final product is tender,therefore suitable for consumption of all ages.
