摘要
为了延长平菇的保鲜时间,采用复合保鲜膜保藏平菇。通过正交试验,得出最佳配方为魔芋胶0.2%,卡拉胶0.2%,甘油1.0%,蔗糖酯0.5%,并加入山梨酸钾与苯甲酸钠各0.1%。平菇用此复合保鲜膜放置在2℃~5℃低温环境中的保鲜效果较理想,保鲜时间为20多天。
Use the Combination of Compound Refreshing Coating Film in preservation of Oyster Mushroom.This experiment use Orthogonal Design and results showed that the best fomula is 0.2 % konjac glucomannan,0.2 % Carrageenin,1.0 % Glycerol,0.5 % Sucrose ester and 0.1 % Potassium sorbate,0.1 % Sodium benzoate.Oyster mushroom use this fomula of Compound Refreshing Coating Film in low temperature 2 ℃-5 ℃ will be more ideal,which prolonged the shelf time over twenty days.
