Diacylglycerol（DAG）oil is effective to prevent obesity and weight-related disorders.DAG can reduce the accumulation of body fat in both animals and humans.The physiological effect of DAG is due to its metabolic pathway,which is different from triacylglycerol（TAG）metabolism.The physicochemical properties,such as melting and smoke points and polymorphic forms of DAG are also different from those of TAG.The production processes for DAG oil were also discussed.
