泥鳅营养价值高,活性成分多。本文对泥鳅的营养成分、食用情况、活性成分研究进展及食品安全性等方面进行了综述,为泥鳅的综合开发和利用提供参考。
Misgurnus anguillicaudatus has a very high nutritional value and is enriched with many active constituents. The nutrient components, application in diet and food industry, research and development of active constituents, and food safety of Misgurnus anguillicaudatus are reviewed in the paper. It is expected to provide the reference for the comprehensive development and utilization ofMisgurnus anguillicaudatus.
