摘要
对大额牛、云南瘤牛、中甸耗牛、迪庆黄牛和中甸犏牛的肉质特性作了系统测试和分析.结果表明,它们在自然放牧条件下,均表现出优良的肉质特性.肌肉的蛋白质含量均高于19%,脂肪含量均低于140%.
THe meat quality characteristics of gayal,
zebu,zhongdian yak,zhongdian cattle yak and dingqin yellow cattle have been firest tested and
analysed.The determined parameters include pH,water holding ratio,the ratio of storing olss,the
tenderness,the well-done flesh ratio,the muscle's grade of colour and marbling,the meat taste
and the nutrient value of muscle.As a result,there are not sifnificantly different among five cattle
breeds on meat feature.The miscle's protein content of their are high then 19%,and the fat
content are less then 140%.It is shown that the main cattle bereed in yunnan with good meat
feature in the condition of natural gazing.
