纸菜生产工艺的研究Ⅰ.纸菜的成型工艺

Studies on the production process of "Paper-Vegetable"Ⅰ. The forming process of "Paper-vegetables

对纸菜成型工艺中胶粘剂的选择及定量，以及菜泥含水率对纸菜成型率的影响进行研究．结果表明．纸菜制品的制作过程中加入的胶粘剂选用CMC比较理想，每公斤菜泥中添加量的最适范围为4．0～7．5g；纸菜成型时菜泥的最适含水率范围为14％～16％．

The results shows that CMC is the best one in 4 kinds of adhesives, and the suitable adding amount of CMC is from 4.0 g·kg-1 to 7.5 g·kg-1. According to the diffrent series of paper-vegetables the optimum moisture contents of raw-vegetables in the forming are from 14% to 16%.
