摘要
从测定速度、可靠性、方便性和经济实用性等角度，采用定性分析和定量研究相结合的方法，对现有各种淀粉测定方法进行了评价和筛选，确定盐酸水解－旋光法、盐酸水解－ＤＮＳ比色法和高氯酸提取－蒽酮比色法为甘薯淀粉测定的适宜方法．
Evaluation for about 15 chemical methods of sweetpotato starch content determination was made by quantitative analysis as well as qualitative analysis in this paper. HCl hydrolysis optical rotation method, HCl hydrolysis DNS method and HClO 4 hydrolysis anthrone method were proved suitable for sweetpotato starch content determination.
