摘要 近年来,由于传统培养方法的局限性,促使微生物学家发明了基于核酸分析的免培养方法来研究微生物群落生态学。这些方法已应用于各种食品微生物检测及发酵工艺优化的研究。概述了分子生物学技术及其在食品工业领域及其相关生态系统中微生物群落分析的最新研究进展,并且对这些技术的优点、方法创新以及目前存在的缺陷进行了评述。 In recent years, the microbiogic population ecology was studied by the culture-independent techniques with the nucleic acids analysis due to the hmitations of traditional cuhure-based methods. These methods were now increasingly applied in food microbiology as well. The research advance of molecular biology techniques and its application in the microbiogic population were summarized, and the merit, method reformation and some flaw were discussed in this paper.
