摘要
研究了降胆固醇乳酸菌WB的微胶囊化工艺,并对微胶囊化后的产品进行了评价。以海藻酸钠、明胶为壁材,含有降胆固醇乳酸菌WB的硅藻土为芯材,采用W/O/W复相乳化法制备微胶囊。通过单因素和正交试验确定最佳制备工艺条件为:乳酸菌WB菌悬液质量分数为20%,内层水相中海藻酸钠和明胶的质量分数分别为2%和3%,外层水相中明胶质量分数为12%。以该工艺制备的乳酸菌WB微胶囊具有较好的耐酸性和肠溶性,产率在86.62%左右,10℃下储存30 d,产品中活菌数仍可达到108 mL-1,体外胆固醇降解率可达到36.07%。
The technology of microencapsulation of cholesterol-reducing lactobaciUus was studied in this paper. A coacervation method with double emulsion strategy (w/o/w) was used to prepare immobilized cholesterol-reducing lactobacillus. Diatomite was chosen as the cartier for bacteria. Sodium alginate and gelatin were used as coating materials.The best condition of technology was obtained by single factor and orthogonal experiments.The results showed that the bacterial cell resuspension was 20%, 2% Sodium alginate and 3% gelatin in inner water phase, and 12% gelatin in outer water phase. The microcapsules made in this method had excellent acid resistance, intestinal-lysis. The production rate is about 86.62 %, and the bacteria viable count over 108 cfu/mL within 30 days, at 10℃ storage temperature. In vitro experiment, the cholesterol- reducing rate can get to 36.07%.
