摘要 牛乳酪蛋白遗传多态性影响着牛乳的组成和干酪制作,同时是研究牛品种特性和系统进化的有用工具。就牛乳中酪蛋白的遗传多态性、乳酪蛋白遗传多态性的研究方法以及酪蛋白多态性与乳品质之间的相关性等进行综述,旨在阐述当前牛乳酪蛋白遗传多态性研究的现状,为今后该方向研究提供参考。 Casein protein polymorphism has a major impact on milk composition, milk production traits and cheesemaking properties of milk. The casein variants are effective tools for studies of breed traits and evolution. The distribution, research methods, and the relation with milk properties of casein polymorphism were reviewed in this paper.
