摘要
以豌豆(Pisum sativum L.)中的过氧化氢酶(CAT)为研究对象,研究了CAT的特性及活性变化,结果表明,豌豆中CAT的最适温度为30℃,最适pH值为7.6。甲醇和乙醇对豌豆中CAT活性的影响均表现为低浓度有激活作用、高浓度为抑制作用。金属离子Cu2+对CAT活性有一定的激活作用,而Mg2+和Na+对CAT活性有一定的抑制作用。
The characteristics and activity of catalase (CAT) extracted from Pisum sativum was studied. The result showed that the optimal temperature of CAT was 30℃, and optimal pH value was 7.6. The activity of CAT in P. sativum fruits was affected by methanol and ethanol which had activation in low concentration and inhibition in high concentration. The metal ion of Cu2+ showed some degrees of activation, on the other hand, Mn2+ and Na+ showed some action of inhibition on the activity in various concentrations.
