可食性涂膜保藏茶新菇的研究 被引量:5

摘要 为了延长茶新菇的保鲜时间,采用可食性复合保鲜涂膜保藏茶新菇。通过正交试验,得出保鲜茶树菇的涂膜最佳配方为魔芋胶0.2%、卡拉胶0.2%、甘油1.0%、蔗糖酯0.5%,并加入乳酸链菌素0.1%、纳他霉素0.05%。茶新菇用此可食性复合保鲜涂膜放置在2~5℃低温环境中的保鲜效果较理想,保鲜时间约20d。 This paper used orthogonal design to decide the edible coatings in preservation of Agrocybeagerita.The results showed that the best fomula was 0.2% konjac glucomannan,0.2% Carrageenin, 1.0% Glycerol ,0.5% Sucrose ester and 0.1% Nisin,0.05% Natamycin. The fomula of compound refreshing coating film in low temperature (2~5℃) would be more ideal, which prolonged the shelf time over twenty days.
