摘要
通过对传统蒸馏工艺中存在的主要问题的研究,剖析了甑桶分离香味物质效率低下的本质。在应用萃取作用原理的基础上,成功地实现了浓香型白酒的可控蒸馏。经生产应用表明。
The principle problems in the traditional distilling technology were studied,and the nature of low efficiency in separating the aromatic substance in the distillation with the traditional steamer was analyzed .On the base of applying the extraction operation,the controllable distillation of Luzhou-flavour liquor has been successfully realized.It was indicated that the controllable distillation technique could greatly increased the rate of high quality liquor in the production.
