摘要
介绍了云门洞藏酒的贮酒容器、贮酒时间和环境,并通过多年的跟踪监测,发现了洞藏酒在白酒感官质量和微量成分变化上同库房贮存酒的不同。证明了洞藏工艺是白酒贮存工艺中最优的。
Storage container,period and environment of Yumen cave storage liquor are introduced.Through many years of follow-up monitoring,it is found that there are differences between cave storage and storehouse storage in the aspects of liquor organoleptic quality and microingredient.It proves that the cave storage technology is an excellent liquor storage process.
