摘要
柠檬酸作为食用酸类,在食品工业上常被用于食品添加剂.许多国家对食品中柠檬酸的含量都有严格规定,因此测定其含量是检测某些食品质量的一项重要指标.介绍了近年来食品中柠檬酸检测的各种方法,如高效液相色谱法、反相高效液相色谱法、离子色谱法、气相色谱法、毛细管电泳法等.
As an edible acid,citric acid is always used as additives in food industry.In many countries,its content in food is strictly controlled,so the determination of citric acid becomes an important issue in detecting the food quality.The determination methods of citric acid in food in recent years are reviewed,such as high performance liquid chromatography,RP-HPLC,ion chromatography,gas chromatography and capillary electrophoresis.
