摘要
水剂法花生制油过程中碾磨后的油料,经纤维素酶为主体包含果胶酶的复合酶系处理能显著提高花生油收率及花生蛋白得率。经优化实验得出酶处理的最适参数为:加酶量0.3%,酶反应时间4h、pH6.4、温度49℃。
It was found that peanut oil extraction rate and peanut protein production was greatly improved by using a complex enzyme containing mainly cellulase and pectic pectase to treat grinded oilseeds in the process of aqueous oil extraction.The optimum parameters of enzyme treatment were :enzyme concentration 0.3%;enzyme reaction time 4h;pH 6.4;temperature 49℃。
