阐述了熟火腿生产的加工工艺与生产设备,指出了在各工艺阶段应注意的问题,同时也介绍了关于滚揉自动化控制方面的有关知识。
The process and equipment to produce prepared ham was studied. What should be attended to in each process, characteristics of every equipment, the automatic control of massaging were pointed out.
