肉豆蔻油树脂的提取及微胶囊化的研究 被引量:3

摘要 文章采用肉豆蔻为原料,以乙醇为溶剂,经浸渍和连续浸提所得的油树脂为芯材,以食用胶为壁材,制成肉豆蔻油树脂微胶囊。通过正交试验获得肉豆蔻油树脂最佳提取条件和壁材最佳配比,还研究了包合工艺对包埋率的影响。实验表明:肉豆蔻油树脂最佳提取条件为乙醇浓度85%、料液比1∶10、提取温度90℃、提取时间5h,壁材最佳配比为麦芽糊精∶阿拉伯胶为2∶1、壁材溶液浓度20%、芯材载量30%,包合条件:反应时间为5h,反应温度为5℃。 The method of microencapsulation,in which nutmeg was extracted as core-material by ethanol solution and edible gums were selected as wall-material,was investigated.The nutmeg microcapsules were obtained through homogenization and drying.The optimal extracting conditions and ratio of wall-material were obtained by orthogonal test.The effect of encapsulation techniques on microencapsulation efficiency was studied.Experiment result showed that the optimal extracting conditions were ethanol concentration 85%,material-solution ratio 1∶10,extracting temperature 90 ℃,extracting time 5 h.the ratio of wall-material was Maltodextrin:Arabic gum is 2∶1,concentration of wall material solution 20%,load percentage 30%,the optimal processing conditions were reaction time 5 h,reaction temperature 55 ℃.
