摘要
生物活性肽具有免疫调节、激素调节、酶抑制、抗菌等多种生理功能。文章研究以蛋清为原料,采用复合动物蛋白酶水解制备蛋清活性肽。通过单因素实验及L16(45)正交实验对制备蛋清活性肽的可控酶解条件进行了优化。实验结果表明,复合动物蛋白酶最适水解条件为:pH7.5,水解温度55℃,底物浓度3%,酶浓度4%,水解时间6h。
Bioactive peptides have immune regulation,hormonal regulation,enzyme inhibition,antibacterial and other physiological functions.Egg white was used as raw material to prepare bioactive peptide.The effects of pH,temperature,hydrolysis time,substrate concentration and enzyme concentration on DH were studied respectively.Based on the results,the L16(45)orthogonal experiment was designed to obtain optimized technology for preparing bioactive peptide.The results showed that the optimum hydrolysis conditions of protamex were pH 7.5,55 ℃,substrate concentration 3%,enzyme concentration 4%,6 h.
