天然富硒绿茶提取物抗氧化活性的研究 被引量:1

摘要 以天然富硒绿茶为原料,采用超声波辅助提取其活性物质,并用DPPH法对提取物的抗氧化活性进行了评价。结果表明,富硒绿茶提取物的体外抗氧化活性高于阳性对照芦丁,低于阳性对照BHT。富硒绿茶活性物质化学组成为:硒1.03μg/g,茶多酚53.22%,茶蛋白31.09%,茶多糖13.56%。 Active substance from natural Se-enriched green tea were extracted with the aid of ultrasonic wave. The antioxidant activity of Se-enriched green tea extracts were evaluated by DPPH method. The extracts showed higher antioxidant activity than positive control rutin but lower antioxidant activity than positive control BHT. The active substance under optimized technic condition contained Selenium 1.03 μg/g,polyphenol 53.22%,protein 31.09% and polysaccharide 13.56%.
