摘要
将原料粉碎后使用高产曲酿制小曲白酒,对生产过程的水分、温度、pH值、发酵时间、粉碎粒度对工艺的影响及配糟用量与出酒率的关系进行研究。结果表明,该工艺可行,可节约成本,减轻劳动强度,经济效益好。
The production of Xiaoqu liquor by grinding raw materials by use of high-yield starter was studied. The effects of moisture content, tem perature, pH value, fermenting time, grinding degree on the production, and the relations between the use level of fermented grains and liquor yield were investigated. The production practice proved that the grinding of raw materials could save production cost, reduce labor and produce satisfactory economic profits. (Tran. by YUE Yang)
