甘薯茎尖中不溶性膳食纤维的提取工艺研究 被引量:4

摘要 通过碱结合木瓜蛋白酶水解法分别提取2种甘薯茎尖的不溶性膳食纤维(IDF),探讨提取的工艺条件,并对膳食纤维的性能进行研究。结果表明,甘薯茎尖中IDF的最佳提取条件为NaOH浓度5%,碱浸温度75℃,碱浸时间70 min,木瓜蛋白酶用量0.6%。成品气味较淡,IDF干基含量分别为70.17%和53.27%,膨胀力为8.11mL/g和6.78mL/g,持水力为6.20g/g和5.18g/g。 Method of using alkali combined with papain hydrolysis was used for extraction of insoluble dietary fiber (IDF) from two kinds of stem apexes of sweet potato. And the properties of the IDF were also studied. The results showed that the optimum extraction conditions were 5% NaOH, alkali soaking under 75℃ for 70 rain with addition ofpapain by 0.6%. Under the above conditions, the extracts had mild taste, and contents of IDF of two kinds of products were 70.17% and 53.27% (dry basis), respectively. Swelling capacity of two products was 8.11 mL/g and 6.78 mL/g, and water holding capacity was 6.20 g/g and 5.18 g/g respectively.
