连翘花色苷的提取及其稳定性研究 被引量:7

摘要 以连翘花瓣为试材,研究了其花色苷的最佳提取方案及稳定性。结果表明,用体积分数为95%乙醇和0.5%盐酸在45℃条件下浸提7 h,效果最佳。pH对连翘花色苷稳定性影响显著。Na+、Cu2+、Ca2+对花色苷稳定性影响不显著,Zn2+对花色苷稳定性影响显著。花色苷的抗氧化性好,抗还原能力较差。葡萄糖、蔗糖等食品添加剂对花色苷稳定性无影响,而柠檬酸则影响较大。 The anthocyanin was extracted from Forsythia suspensa's pedal to study the optimum extraction method and it's stability.When the pedal being emerged into 95% ethanol and 0.5% hydrochloric acid at 45℃ for 7h,the anthocyanin could be obtained the maximum yield.The pH had significant effect on the anthocyan.If pH is lower,the anthocyan is suituable to keep its good heat resistance.Na^+,Cu^2+ and Ca^2+ had no effect on the anthocyan,while Zn^2+ had greater effect.The anthocyanin had better anti-oxidizability and worse reducibility.Food additives such as glucose and sucrose had no effect on the anthocyanin,but the citric acid had greater effect.
