人工养殖泥鳅含肉率及肌肉营养成分分析 被引量:25

摘要 为了给泥鳅种质资源的开发利用及人工养殖提供依据,对池塘人工养殖的泥鳅含肉率及肌肉营养成分进行测定,结果表明:泥鳅含肉率为71.06%;肌肉中蛋白质、脂肪和灰分含量分别为18.87%、3.42%和1.21%;肌肉中18种常见氨基酸的总含量为80.40%(占肌肉干重),其中必需氨基酸含量为35.91%,占氨基酸总量的44.66%,必需氨基酸与非必需氨基酸含量的比值为0.81,鲜味氨基酸含量为30.07%,占氨基酸总量的37.40%,必需氨基酸指数(WHO/FAO标准为参照)为88.44,蛋氨酸+胱氨酸为第一限制性氨基酸,色氨酸为第二限制性氨基酸。 The meat rate and muscle nutrient components of Misgurnus anguillicaudatus under artificial breeding were determined to provide the scientific basis for development and utilization of germplasm resources and artificial culture of Misgurnus anguillicaudatus.The results showed that the meat rate was 71.06%,the content of protein,fat and ash in muscle was 18.87%,3.42% and 1.21%,respectively,the total content of 18 common amino acids in muscle was 80.40% of dry muscle weight,the content of essential amino acids was 35.91%,accounted for 44.66% of total amino acid content,the ratio of essential amino acids content to non-essential amino acids content was 0.81,and the content of tasty amino acids was 30.07%,accounted for 37.40% of total amino acids content.The essential amino acid index was 88.44.Methionine and cystine are the first limiting amino acids,and tryptophane is the second limiting amino acid.
