摘要
介绍了用天然保鲜剂保鲜肉类的几种方法,分析了这些方法保鲜的原理,简述了它们目前在肉类保鲜中的研究和应用情况。文中也指出了用天然法保鲜肉类还需解决的一些问题。
Several ways of meat preservation with natural antistaling agent are intruduced, the reasons why these methods can keep fresh are analysed, and some related researches including their applications at present are stated briefly in thispaper. Some problems required to be solved are also pointed out in this article.
