臭氧在鲜食葡萄无硫贮藏技术中的防腐保鲜效果 被引量:11

Effects of ozone preservation technology on SO_2-Free grapes during storage

摘要 研究了不同浓度、时间臭氧处理对南方产区鲜食葡萄保鲜效果的影响。试验结果表明不同臭氧处理均显著抑制了冷藏期浆果的腐烂率(P<0.05),不同程度降低了其落粒率,有效延长了果实贮藏寿命最高可达2倍以上(P<0.05),臭氧处理结合保鲜袋包装(MAP)显著降低了穗轴(果梗)干褐的发生(P<0.05),防止了果穗水分过度散失引起的失重,从而保持了果实新鲜度,处理对冷藏期果实可溶性固形物含量变化无显著影响。表明臭氧处理可作为SO2的高效安全替代品在葡萄贮运中使用。 The study of different concentration ozone treatment with different time periods at(10±1)℃and RH 60%-80%were carried out to find their fresh keeping effects on the grapes from southern area of China in cold storage.The ozone treatments significantly inhibited the pulp decay(P〈0.05),and reduced the berry abscission distinctly.The storage life of treated grapes was doubled compared to the controls.Ozone treatments in combination with modified atmosphere packaging(MAP)markedly slowed down incidence of dry and browning stalk(P〈0.05),refrained of weight loss caused by the clusters dehydration.The fruit's soluble solids showed minimal changes.These effects indicated ozone is a proper substitute in SO2-free grapes during storage.
