摘要
采用微波法辅助提取紫甘蓝菜色素,改进了传统的浸提工艺,通过单因素和正交实验确定微波辅助提取的最佳工艺条件。结果表明:原料为1g粉粹的干紫甘蓝,采用水作为提取剂、微波功率为450W、提取时间为3min、液固比为10:1(mL:g)。与传统的浸提法和超声波辅助提取相比,时间由4h和50min缩短为3min,微波辅助提取色素具有时间短、耗能低等优点。
The technology of microwave-assisted extracting pigments from purple cabbage using organic solvent was studied.Based on traditional methods,an improved technology was developed through condition optimization with single factorand orthogonal experiments.The obtained optimum extraction conditions are as follows:microwave power 450W,extraction time 3min,and liquid-solid ratio 1:10(mL:g).Compared with traditional extractionmethods and the ultrasound-assisted extraction,the microwave-assisted extraction reduces extraction time from 4h and 50min to 3min So the microwave extraction technique possesses advantages of short time,low energy consumption,and high extraction rate.
