摘要
通过水浴浸提的方法考察普洱茶多酚和茶褐素的最佳浸提工艺。在单因素实验的基础上,运用正交实验统计分析,确定普洱茶多酚和茶褐素的提取条件为:温度100℃,时间60min,料液比为1∶25,茶多酚含量可达到9·04%,茶褐素提取率可达到93·15%。
The best extraction process of Pu’er tea polyphenols and theabrownins(TBs) were studied through the method of water extraction. In the single-factor test,based on statistical analysis of the use of orthogonal test,it had found the best extraction conditions of Pu’er tea polyphenols and TBs:temperature 100℃,time 60min,liquid ratio of 1∶25,tea phenol content of 9.04% could be achieved,and extraction rate of TBs could reach 93.15%.
