摘要
测定了实验室保藏9株食品级双歧杆菌体外降胆固醇的能力以及耐酸、耐胆盐和细胞粘附的益生特性。结果表明,9株受试菌株具有良好的耐酸、耐胆盐和细胞粘附特性,且5株菌降胆固醇均达到50%以上。从中选择6#菌株作为今后益生菌制剂和功能性乳制品开发的潜在菌种。
The present study was undertaken to check nine bifidobacterium cholesterol-reducing ability,acid tolerance,bile salt tolerance and adhesion properties. Results showed that all strains had good acid tolerance,bile salt tolerance and adhesion properties,and the cholesterol- reducing rate of five strains reached above 50%. 6# was selected for probitics and functional milk strains.
