摘要 本试验研究了饲粮中添加1000mg/kg甜菜碱对“杜长大”生长猪胴体组成和肉质的影响。结果表明:添加甜菜碱使生长猪瘦肉率提高了4.74个百分点(P<0.05),背最长肌面积提高了1911%(P<0.05),背膘厚和板油重分别降低了14.81%(P<0.05)和25.53%(P<0.05);肉色和大理石纹评分分别提高了17.35%(P<0.05)和16.23%(P<0.05),背最长肌肌红蛋白含量上升了1.06个百分点(P<0.01),粗脂肪含量提高了3.31个百分点(P<0.01)。 This trial was conducted to determine the effects of betaine on carcass composition and meat quality of growing pigs.The results showed that adding betaine increased dissected lean of carcass (PDL) by 4.74 percentage points ( P <0.05) and LDA by 19.11%( P <0.05),decreased backfat deqth and leaf fat weight by 14.81%( P <0.05) and 25.53% ( P <0.05),and that meat color and marble of muscle of pigs fed betaine added diet were increased by 17.35% ( P <0.05) and 16.23% ( P <0.05) respectively.Content of myoglobin in LD was elevated by 1.06 percentage points ( P <0.01) obviously,and ether extract content was increased by 3.31 percentage points ( P <0.01).
