绿色木霉发酵制备黄豆渣膳食纤维的研究 被引量:8

摘要 本文以黄豆渣为原料、绿色木霉为菌种,制备水溶性含量高的膳食纤维,采用L16(45)正交试验对前发酵过程工艺条件展开了研究。试验表明,最佳工艺条件是:发酵液初始pH值5,发酵时间108h,发酵温度32℃,装液量115mL/250mL,接种量10%。通过前后二次发酵,总膳食纤维的得率为50.13%,水溶性膳食纤维(SDF)得率为12.03%,SDF约占总膳食纤维(DF)的24%,增加了黄豆渣膳食纤维中SDF含量。产品颗粒细小、均匀、色泽淡黄、口感细腻,持水力为10.31g·g-1,膨胀力为11.21mL·g-1。 Soybean dregs were used as materials to produce dietary fibre (DF) by fermentation technology with inoculant trichoderm aviride, which could increase soluble dietary fiber (SDF) content in DF. The fermentation process included the former phase and the after phase, and the technology of the former was explored here. Single factor experiment and orthogonal design test L16 (4^5) were used to optimize the fermentation technology. The results showed that initial pH was the most important factor affecting the yield of SDF, and the optimized formula were followings: initial pH 5, time 108h, temperature 32℃, 115 mL culture medium in 250 mL flask, inoculation amount 10%. The yield of DF was 50.13% and that of SDF was 12.03%, and there was 24% content of SDF in DF. The products were very small constituent particles with even size. Water retention capability and expansive capacity of the produced DF were 10.31 g.g^-1 and 11.21 mL.g^-1, respectively.
