双孢蘑菇栽培质量安全调查与分析

Investigation and Analysis of Quality Safety about Agaricus bisporus Cultivation

双孢蘑菇是一种美味的营养保健食品,其食用安全问题引起人们广泛关注。本文对邹城市双孢蘑菇的生产原料和产品的有害重金属和农药残留进行了调查与分析。结果表明,双孢蘑菇子实体中重金属和农药残留都未超过国家标准,产品质量比较安全。栽培原料中秸秆和水的重金属含量少,牛粪和覆土重金属含量较高,是重金属的主要来源。双孢蘑菇原料中农残极少,只在覆土中检测到部分杀虫农药,出菇管理过程中农药的选用和使用方法是控制农药残留的关键控制点。

Agaricus bisporus is a kind of delicious and nutrient health food. Its quality safety has aroused wide concern among people. In this study, the content of harmful heavy metal and pesticide residues in materials and fruitbodies were surveyed and analyzed. The results showed that the contents of heavy metals and pesticide residues in fruitbodies were not exceeded the national standards. The contents of heavy metals in straw and water were less, while those in the cow dung and soil were higher as the main sources of heavy metals. There were rarely pesticide residues in the raw material and only some insecticides were detected in the covering soil. The selection and use of pesticides in the fruiting management process were the critical control points of pesticide residues.
