摘要
本文论述了在榨菜加工过程中所使用的新方法及其原理,并对榨菜加工中可能出现的新方法进行了展望。榨菜加工中的新方法主要有:低盐化技术、超高压杀菌技术、臭氧杀菌技术和微生物技术。
The new technology for producing preserved mustard tuber and its working principle are reviewed in this paper.This paper also speculates on prospects of developing more innovative means of production.The new technology mentioned here includes low salt technology,ultra high pressure processing,ozone sterilization and microbial technology.
