摘要
为开发和利用长白山野生猕猴桃资源,以软枣猕猴桃、狗枣猕猴桃及葛枣猕猴桃和美味猕猴桃为材料,分析比较它们的营养及功能成分.结果表明,葛枣猕猴桃中VC、多酚及Mn和Fe等必需微量元素含量最高.狗枣猕猴桃中糖类物质和果胶含量最高,其次为软枣猕猴桃和葛枣猕猴桃.3种野生猕猴桃鲜果中各营养及功能成分含量均高于美味猕猴桃.
In order to develop the resources of wild kiwi fruit,the nutrition and functional component of the A.aruta(Sieb.et Zucc.)Planch.ex Miq.,Actinidia kolomikta(Maxim.et Rupr.)Maxim and Actiaidia Polygama(Sieb.et zucc.)Miq.were analysised.The resoult showed that the content of VC,polyphenols and Mn,Fe were the highest,the content of VC and polyphenols were 738 mg/100 g and 3.66%.However the content of saccharine and pectin is higher in the Actinidia kolomikta(Maxim.et Rupr.)Maxim than A.aruta(Sieb.et Zucc.)Planch.ex Miq.and Actiaidia Polygama(Sieb.et zucc.)Miq.All of the nutrition and function components of three wild kiwi fruit were both higher than the A.deliciosa fruit.
