摘要
超声波能够产生多种独特的物理和声化学效应,在包括食品工业在内的诸多领域受到广泛重视。本文对超声波的分类及作用机理进行了概述,并针对其在食品领域的应用进行了归纳,包括:无损检测、提取、结晶、灭菌、干燥、熟化、乳化、破乳分离、解冻、除泡、切割、雾化、辅助过滤/筛分、嫩化和挤压成形,并简要分析了该技术的应用优势。
Ultrasound can create many unique physical functions and chemical functions. So it gets much attention in industry fields including food industry. The objective of the present paper is to give a brief introduction about the classification and usage of ultrasound in food industry fields, including food inspection, assistant extraction, crystallization, sterilization, drying, aging, emulsification, demulsification, thawing, defoaming, cutting, titration/screening separation, tenderization and extrusion. There is also an analysis about the advantages of ultrasound application in industry.
