摘要
色泽是指酱油颜色的深浅,用色率强度来表示。色调是酱油中含主要颜色强弱的指标,可用红色指数来表示。通过在发酵前期的酱醪汁中添加不同种类的氨基酸、还原糖、有机酸和金属离子等条件,测定其色泽和色调的变化,分析了影响酱油颜色的因素。
Color was shades of soy sauce, which was indicated by intensity of color ratio. Hue was instructions of colors changes in soy sauce that can be indicated by red index. In this paper, the effects of different amino acids, reducing sugars, organic acids, metal ions and other conditions on color and hue in soy sauce were investigated.
