摘要 以鮰鱼鱼皮为原料,选用多肽水解酶,分别从酶解时间、加酶量、酶解温度和酶解pH值等因素来研究多肽水解酶对鮰鱼皮酶解所形成肽含量的影响,并通过正交试验优化了酶解条件,其最佳酶解条件为加酶量0.5%,酶解pH值为8.0,酶解温度55℃和酶解时间3.5h,所得的水解液中多肽含量为18.84mg/mL,且鱼皮胶原蛋白肽中分子量在180Da^5000Da的占94.89%。 Using bullhead skin as a raw material, the effects of hydrolysis conditions of peptide hydrolase on peptide yield from bullhead skin were investigated including hydrolysis time, enzyme concentration, hydrolysis temperature and pH. The hydrolysis conditions were optimized by orthogonal experiment as follows: enzyme concentration 0.5%, pH 8.0, hydrolysis temperature 55℃ and hydrolysis time 3.5h. Under above conditions, the peptide yield was 18.84mg/mL, and the peptides with the molecular weight ranged from 180 Da to 5000 Da made up 94.89% of the total peptides.
