摘要
考察了壳聚糖二元酸盐对大肠杆菌的抗菌性能,初步探讨壳聚糖二元酸盐对大肠杆菌的抗菌机理,结果表明,壳聚糖二元酸盐的抗菌活性是通过与细菌细胞膜产生强烈相互作用而实现的,这种相互作用导致细菌细胞膜的通透性增加并失去完整性,细菌因细胞质外流,DNA等物质渗漏而死亡。
The antibacterial activity and antibacterial mechanism of Chitosan dicarboxylates to Escherichia Coli were studied.The results showed that the chitosan dicarboxylates was of the antibacterial activity through the strong interaction between chitosan dicarboxylates and the cell membrane of Escherichia coli and this interaction led to the increase of permeability,losing the integrity of cell membrane,which reslted in the death of Escherichia coli due to the outflow of cytoplasm and DNA.
