摘要
在南京城镇居民的食品消费行为调查数据的基础上,可以对在外就餐与食品消费结构的关系,以及在外就餐行为进行经济学分析。研究发现,在外就餐的形式决定在外就餐与在家就餐的结构差异,在外就餐的原因也影响着在外就餐的形式选择,工作餐、家庭聚餐和社交聚餐三种目的的就餐分别受到时间的约束、收入的约束和社会因素的制约。总体来看,在外就餐与在家就餐消费结构的差异,将导致统计数据中粮食消费的高估、肉类和蔬菜消费数据的低估。
The key issue of this paper is food - away - from - home. This research indicates the unreasonable statistical method of food consumption data in China Statistical Yearbook by analyzing the differences structure between eating at home and eating out. This study bases on urban residents" food consumption survey data in Nanjing, study the relationship between the food - away - from - home and the food consumption structure, as well as economic analysis of dining out behavior. The results found that the style of food - away - from - home decides the difference between dining at home and out, the reasons for dining out also affect the style of dining out, and the work of the meal, family dinner and the social purpose of the three types of eating dinner were subject to the constraints of time, income and social factors. In general, the consumption structure of the differences will lead to the statistics over - estimated the consumption of grain, meat and vegetable consumption data underestimated.
