摘要
[目的]通过对乌克兰鳞鲤二、三倍体成鱼肌肉的水分、总灰分、粗脂肪、粗蛋白以及氨基酸和脂肪酸构成等进行对比,为科学评估其营养品质提供基础数据。[方法]分析用样品取自鲤鱼背部肌肉,各指标的测定采用国家标准方法。[结果]三倍体与二倍体肌肉中的水分、总灰分、粗脂肪含量无差异,而三倍体粗蛋白含量在0.05水平显著高于二倍体;乌克兰鳞鲤三倍体成鱼肌肉的脂肪酸种类、脂肪酸总量、必需脂肪酸含量明显高于二倍体;二、三倍体成鱼肌肉中的氨基酸种类相同,均为18种,但三倍体鲜味氨基酸、必需氨基酸以及氨基酸总量和氨基酸评分值均高于二倍体。[结论]乌克兰鳞鲤三倍体比二倍体更具有营养学优势。
[Objective] The water content,total ash,crude fat,crude protein,amino acid and fatty acid of the diploid and triploid Ukraine scaled carp were contrasted to supply the basic data for nutrition evaluation.[Method]The samples were collected from the back muscle of each carp,and the standard analysis methods were used.[Result] There was no difference in the content of water,total ash and crude fat in the muscle between diploid and triploid.The content of crude protein in triploid was significantly higher than those in diploid.The species of fatty acids,total fatty acid amount and the content of essential fatty acid in triploid were higher than those in diploid.There were 18 species amino acids in triploid and diploid.The content of flavour amino acids,essential amino acids,total amino acids and the amino acids score in triploid were higher than those in diploid.[Conclusion]The Ukraine scaled carp triploid has nutriology advantage compared with diploid.
