蔬菜中硝酸盐积累的机制和降低途径 被引量:12

Mechanism of Nitrate Accumulation in Vegetables and Decreasing Way

摘要 近年来,随着人民生活水平的提高,人们开始关注食品安全和健康,对蔬菜中硝酸盐含量也更加关注。人体摄入硝酸盐的主要来源是蔬菜,占总摄入量的81.2%。蔬菜中硝酸盐的积累与施用含硝态氮肥料与否没有直接关系,而与蔬菜种类及氮肥用量等相关。降低蔬菜中硝酸盐含量应通过控制氮肥用量、平衡施肥和加强田间管理来解决。 In recent years,with the improvement of people's living standard,people started to pay attention to food security and self-healthy,especially to the nitrate content in vegetables.The main source of human intake of nitrate is from vegetables,about 81.2%.The nitrate accumulation in vegetables is not related to nitrate-fertilizers,however,it's related to the type of vegetables and the dose of nitrogen used.By controlling the dose of used nitrogen,balanced fertilization and strengthening field management can reduce the nitrate accumulation in vegetables.
