摘要
采用常规营养物质测定方法对黑龙江茴鱼卵营养成分及氨基酸含量进行了分析。结果表明,黑龙江茴鱼卵鲜样中粗蛋白含量31.57%、粗脂肪含量4.93%、粗灰分含量3.67%、水分含量56.53%;总氨基酸中,谷氨酸(Glu)、亮氨酸(Leu)、赖氨酸(Lys)、天冬氨酸(Asp)、丙氨酸(Ala)含量较高,占氨基酸总量的46.69%;游离氨基酸中,苏氨酸(Thr)、谷氨酸(Glu)、丝氨酸(Ser)、赖氨酸(Lys)、亮氨酸(Leu)含量较高,占氨基酸总量的57.35%。游离氨基酸占总氨基酸含量的0.45%。
The nutritive components and the content of amino acids in fully vitellogenic oocyte of Thymallus arcticus grubei were analyzed using traditional method.The results showed that the contents of crude protein,crude fat,crude ash and moisture of fully vitellogenic oocyte were 31.57%,4.93%,3.67% and 6.53%,respectively.Glutamic acid,leucine,lysine,aspartic acid,alanine were the most abundant amino acids and accounted for 46.69% of total amino acid content.Threonine,glutamic acid,serine,lysine,leucine were the most abundant amino acid and accounted for 57.35% of total free amino acid.The proportion of the sum of free amino acid is 0.45% in the sum of total amino.
