摘要
难以被肠道酶降解的抗消化淀粉(RS),广泛存在于自然界或通过食品加工形成,并引起了人们的极大兴趣,它们主要有4类。本文重点论述了RS对人体血糖水平、肥胖、癌症、脂质代谢和能量等方面的重要生理功能,同时展望其应用前景。
Resist starch(RS),that which does not digest in the small intestine ,occurs naturally or through processing,has now attracted great attention.The four main types of RS and their potential positive effects on blood glucose, diabetes, cancer, lipid metabolism and enery value etc. are reviewed in this paper.The prospective application of RS in the food area and their research are also pointed out.
